Ceylon Prawn Curry Recipe

If you are a seafood lover, this recipe is just for you. Using prawns you can make one of the best seafood dishes in the world. This recipe is all about Asian taste prawn curry. My grandmother grew up on an island called “Ceylon” which is ready to access seafood. She knows how to cook prawns/shrimps perfectly. She adds her curry powder mixture and all other ingredients and gets the delicious authentic taste which is just perfect. This recipe is hers. You have to find good quality prawns/shrimp and clean them. Prawns and shrimps are differentiating with their number of legs and claws. You can easily find shrimp in the US and prawns in Australia or New Zealand. This recipe applies to both prawns or shrimps. Ceylon prawns curry is making using coconut milk and spices (curry powder). Any kind of curry gets its taste from the ‘Curry powder’.

To Marinate:
 450 g Shrimp/Prawns [About 25-30 shrimp]
 ½ tsp Curry powder
 ½ tsp Salt [Later on you can add more depends on your taste]
 1 tbsp Soy Sauce
For the Curry
 7 Garlic Cloves – chopped (about 1 ½ tablespoon)
 1 Onion – chopped
 1 inch Ginger – chopped
 2 tsp Unroasted Curry Powder
 1 ½ tsp Pepper
 12 Curry Leaves
 2 Pandan Leaves (2-3 inch in size)
 1 Cinnamon stick
 4 Cardamom pods
 4 Cloves
 3 tsp Red Chili powder (if you can’t eat spicy food, reduce this)
 2 tbsp Lemon juice
 2 cups Coconut milk
 1 cup Water
 Bunch of Coriander /Parsley leaves
 Salt to taste

Marinate Prawns

Remove the heads and clean the shrimps/ prawns.

Add Salt, Curry powder ½ teaspoon, and 1 tablespoon soy sauce and marinate the prawns.

Set aside for around 15 minutes.

How to Cook Prawns

Chopped or grind Cinnamon, cardamom, and cloves together.
Set aside.

Into a big saucepan, add chopped onions, garlic paste, or chopped garlic and ginger.
[You can even fry them with oil]

Add chopped/grind cinnamon, cardamom, and cloves into the saucepan.

Now add marinated prawns into the saucepan, add remaining curry powder 2 teaspoons, pepper, chili powder, curry leaves, pandan leaves, and a bunch of Coriander /Parsley leaves [not mandatory]

Now add ½ cup of milk + 1/3 Cup Water and lemon juice.

Mix well and close the lid.

Let the shrimps cooked until softened. It will take around 10-15 minutes.

While gently stirring add salt to your taste.

Add remaining coconut milk.
[If you do not like gravy and thickness in the curry, add a little bit of water]

Bring the mix to boil until prawns are well cooked and in orange/pink color.

Turn off the heat and remove the saucepan from heat.

Serve with Rice/Bread/Roti or anything as you wish.

Notes :
If you want to make it spicy add more chili powder or pepper.
If you do not like spicy food, make sure to reduce pepper and chili powder quantities.
If you can’t find Curry leaves and pandan leaves, do not worry about it.
You can add 1 teaspoon oil and fry the onions and garlic and then you can proceed with other steps by adding other ingredients one by one. Here I didn’t add oil and didn’t fry them, due to health concerns of some.
