Mushroom Fried Rice

This delicious fried rice is an Asian-inspired recipe that my grandmother taught us when we were kids. She used to prepare this for some special occasions. We used to love this. She is from Sri Lanka (an Asian country). Some of you might have heard about it as “Ceylon”. It is a tiny little island. My grandmom knows all about Asian foods. She taught my mom and us as well.

 2 cups Uncooked Basmati Rice
 100 g Shrimp, Shredded Pork, Chicken Or Bacon Diced (Optional)
 1 Onion Diced
 3 Clove Garlic - Chopped (Or Garlic Paste)
 4 Leeks Sliced
 2 Carrot, Grated
 1 Cup Mushrooms – Washed, Drained and Chopped
 2 Eggs
 3 tbsp Oil Or Butter – Butter Taste Better than Oil
 2 tbsp Soy Sauce
 Handful of Bean Sprouts
 Small Piece of Ginger, Chopped Well (Ginger Paste is also fine)
 Salt and Pepper to taste

I learned many recipes from our grandma and we used to love her special flavors which we haven’t tried anywhere else.
I thought I should share this yummy mushroom and beansprout fried rice recipe with you all. Guys, it is not mandatory to use all of these below ingredients. Feel free to skip a few if you cannot find them right now at your home. There won’t be any harm if you remove one or two vegetables, the taste will be slightly changed, but trust me, it is still the best-fried rice recipe you are going to try.
For anyone who does not love normal rice, try this fried rice with mushroom and bean sprouts and see the difference. If your family members do not like normal rice, give this a try and let me know what they say about it!
Now make sure all of your ingredients are ready and prepared within arm’s reach.

Wash rice and cook the rice in a rice cooker and remove it when almost fully cooked.

Allow cooling completely.

In a separate bowl, beat eggs with a fork, add salt and pepper.

Place the oil in a wok or a frying pan and place on high heat and add the mixed eggs and scrambled it until firm. Remove the scrambled eggs from the work. Keep it aside.

To the empty wok if there is no oil left, add oil and add the meat/shrimp/seafood. Whatever you are going to use.

Then add onions, garlic, ginger. You will get a nice smell.

Then add grated carrots, chopped mushrooms, and bean sprouts and stir fry for approximately 2 minutes or less.

Onions have to be light brown and carrots have to be soft and cooked well.

Add remaining oil to the wok and heat over high heat until it is very hot.

Add the scrambled eggs and then the cold rice to the wok and stir to coat every grain.

Lastly, add the soy sauce and mix well.

Serve hot.

Note :
Meat lovers can add any type of meat, which you can find at home.
Vegetarians can skip all the meat and egg.
When you use butter, it taste better than oil and it will make everything perfectly fine and brownish in color.
Eggs add protein to your dish. You can add more eggs and skip meat if you do not like meat.
Of course, you can customize this dish with whatever you have at home right now!
You can add any kind of veggies, I have used carrots, leeks and bean sprouts.
You can use green peas, brinjals, cabbage, bell pepper, asparagus, broccoli or anything you can find. Cut them into small pieces and fry them
