Delicious Savory Ceylon Crab Curry

 400 g Crab, Cleaned
 2 tbsp Oil
 Few Curry Leaves
 Few Coriander Leaves
 1 (Inch) Ginger – Chopped
 1 tbsp Tamarind Paste
 1 Pandan Leaves
 ½ tsp Chili Pieces Or Powder
 2 Large Onions – Sliced
 5 Garlic Cloves - Chopped
 300 ml Coconut Milk
 200 ml Water
 Salt and Pepper to Taste
Curry Powder
 4 tsp Coriander Seeds
 3 tsp Cumin Seeds
 2 tsp Fennel Seeds
 ½ tsp Mustard Seeds
 1 tsp Fennel Seeds
 6 Cardamom Pods
 5 Cloves
 Cinnamon (Around 2 inch) - Cut to pieces
 Pandan Leaf
 20 Fresh Curry Leaves
How to make Curry powder

Grind all spices together in a grinder. Make sure there are no big pieces left.

How to make Crab Curry

Marinate crab with salt and pepper, soy sauce, chopped coriander leaves, curry leaves, and curry powder.

Heat oil in a pan.

Add curry leaf and chili pieces and saute for 2 minutes.

Add the onion and saute until translucent.

Add marinated crab and mix briskly.

Add the coconut milk and water and simmer for 10 minutes.

Adjust salt to taste.

Notes :
Choose fresh crabs to make this dish.
If it's pre-killed make sure it's frozen properly just after it killed.
Make sure to buy crabs from a well-known source.
