Home-made Pad Thai

Let us get ready now! Make sure all ingredients are with you and nearby before you start making the dish.
 200 g Flat Noodles Or Rice Noodles
 1 tbsp Oil
 2 tbsp Soya Sauce
 ½ tbsp Sugar
 1 tbsp Tamarind Paste
 1 tbsp Garlic Paste
 1 tbsp Thai Fish Sauce
 ½ cup Chicken Stock
 2 Eggs
 3 Dry Red Chilies – Chopped
 200 g Prawns - Chopped
 100 g Carrot/Leeks [or both]
 1 Lime
 4 Green Onions – Chopped
 Cleaned Handful Of Bean Sprouts
 Peanuts – Crushed
Notes : If you don't have carrots, use leeks, or else you can use both of them.

Prepare rice noodles or flat noodles.

Make sure to cook your rice noodles quickly and evenly. If the noodles are still hard add little water and don’t over boil the noodles. You have to keep checking it once it comes to boiling temperature.

Now, get a separate bowl and combine soy sauce, lime, sugar, tamarind paste, curry paste, garlic, fish sauce, and chicken stock and put aside.

Place oil in a frying pan or a large wok, over medium heat and add beaten egg, scrambled them, and push to side of the pan/wok.

To the same pan/wok, add chili and prawns, sauté for 3 min

Add carrots/leeks [or both] and green onions

Add sauce and continue to sauté until prawns are cooked through.

Adjust salt for your taste.

Add bean sprouts at the end to retain their crunchy texture and color.

Stir all together with the cooked rice noodles

Once done, remove it from the flame.

Sprinkled the dish with crushed peanuts and coriander.
